Cocoa Balls

Filled with oats and rolled in coconut or pearl sugar, these no-bake cookies are a breeze to make. Enlist a child's help, say you're making "mud balls,"
substitute orange juice for the coffee . and make a special memory.

Prep Time: 15 minutes
Total Time: 15 minutes
Ingredients:

. 1 1/2 cups quick oats
. 1/4 cup sugar
. 3 Tbsp. unsweetened cocoa powder
. 3 Tbsp. cold coffee (or orange juice)
. 6 Tbsp. softened unsalted butter
. flaked coconut or pearl sugar (or, substitute crushed sugar cubes for the pearl sugar)

Preparation:

Mix together the quick oats, sugar, and cocoa powder. Add up to 3 Tbsp. cold coffee or orange juice to moisten. Using your hands, rub in the butter until
batter holds together in a soft mass.

Shape the batter into walnut-sized balls. Roll each one in coconut or pearl sugar. Place cocoa balls on baking sheet and refrigerate for at least one hour
(if you like firmer cookies, place in freezer).

Yield: 15 cookies (recipe can be doubled).
