Chocolate Zucchini Cake with Chocolate Fudge Glaze (baked
Yield: 1 13x9-inch cake
30 minutes to cook
Ingredients
CAKE: 4 eggs 3 cups sugar 3/4 cups cocoa 1&1/2 cups, plus 1 tbsp,
oil 1 tsp vanilla extract 3 cups grated zucchini 1 cup walnuts or
chocolate chips (optional) 3 cups flour 1 tsp baking soda 1&1/2
tsp baking powder
CHOCOLATE FUDGE GLAZE 2 tbsp (1/4 stick) butter 1/2 cup water 1
tsp vanilla 1/4 cups cocoa powdered sug
PROCEDURE
CAKE: 1. Preheat oven to 350캟. 2. Combine eggs, sugar, oil,
zucchini, and vanilla. 3. In a separate bowl, combine flour,
cocoa, and baking powder and soda. 4. Pour the wet ingredients
onto the dry ingredients. Mix until combined. 5. Add chocolate
chips and/or walnuts (if desired), folding or stirring them in.
6. Spray cake pan with cooking spray, then put batter in pan.
Bake at 350 for 30 minutes or until cake tester inserted in
center comes out clean. 7. Allow to cool. Once cooled, add
glaze (see below).
CHOCOLATE FUDGE GLAZE: 1. Place all ingredients in pan and heat
until butter melts. 2. Stir ingredients to combine. Add
powdered sugar, a bit at a time, until you have a "soft and
spreadable" glaze.
