Southern Red Velvet Cake
submitted by Marcella D. 1 1/2c sugar 1 1/2 c. veg. oil 2 large eggs 3 Tbsp unsweetened cocoa powder 21/2 c. self-rising flour ( I use Cake flour) 1c. buttermilk 1 tsp vanilla 1 ounce red food coloring 1 tsp white distilled vinegar 1 tsp baking soda Preheat oven to 350F. Cream the sugar and oil in a large bowl. Add the eggs, mixing well after each one. Combine the cocoa powder and flour.in a separate bowl Add the buttermilk and flour mixture alternately to the creamed mixture mixing well. after each addition. Stir in the vanilla and food coloring, beat well. Combine he vinegar and baking soda, add to the batter and beat well. Pour batter into 3 round 8" cake pans and bake 30-35minutes. Remove from oven and let cool. FROSTING: 1 1/4 stick of butter 10oz . cream cheese- softened 3 c.up Confectiioner sugar 1/2 tsp vanilla 1 c. chopped nuts (optional) Cream the butter and Cream cheese in a medium size bowl. Slowly add the Confectioner sugar unitl well mixed.
