I used canned new potatoes, and you can get them sliced or diced from some grocery stores, but an egg slicer will slice them no problem if you get whole ones. I core apples, of course, but never peel them for anything, as why throw all that good nutrition from the peel out?
What I generally use is two packages of smok4ed bratwurst, (Johnsonville is a decent brand) with two cans of new potatoes in the bottom of the pot and then a jar or bag of sauerkraut tossed with an apple cut into small pieces and a heaping tablespoon of whole peppercorns.
