I like to use bok choy (Chinese cabbage) with other Chinese vegetables to make a low calorie soup. Use bok choy, baby corn, black button mushrooms, water chestnuts (usually canned), and cubed tofu (optional). Put vegetables in a soup pot. Add enough water to barely cover. Simmer until the veggies are crisp tender, about ten minutes. Flavor with miso or soy sauce if desired. Weight Watchers has a "no points" soup recipe similar to this.
Of course you can cut cabbage in sections and boil, as you would on St. Patrick's Day when you serve it with corned beef. You could add salt, but cabbage doesn't really need more flavor.
