Festive Banana Nut Bread

 

Quick breads for dessert are perfect for baking at the last moment because they 
don't involve kneading and you don't have to wait for the bread to rise.

They are also great for taking to picnics and family gatherings.

A perfect gift bread for the Yule season, this festive banana nut bread is 
filled with colorful candied fruits, raisins, and nuts to give it a unique, 
delicious

flavor. Makes one loaf.

Ingredients:

. 2-1/2 cups all-purpose flour

. 4 tsp baking powder

. 3/4 tsp salt

. 3/4 cup chopped walnuts

. 1-1/2 cups mixed candied fruit

. 1/3 cup raisins

. 1/2 cup mashed banana

. 1/2 cup shortening

. 3/4 cup granulated sugar

. 3 eggs

. 1/2 cup orange juice

Preparation:

1. In large bowl, stir together flour, baking powder, salt, nuts, fruit, and 
raisins. Set bowl aside.

 

2. In separate large bowl, cream together banana, shortening, and sugar. Stir 
in eggs and orange juice.

 

3. Slowly mix dry ingredients into banana mix.

 

4. Scrape batter into greased 9 x 5-inch loaf pan.

 

5. Bake at 350 degrees F for about 60 minutes or until toothpick inserted in 
center comes out clean.

 

6. Let bread cool for about 20 minutes before turning out on rack.
