Pumpkin Dump Cake
1 box yellow cake mix
1 can (15 oz) pumpkin puree- canned pumpkin (NOT pumpkin pie mix)
1 can (12 oz) evaporated milk
3 large eggs
1 1/2 cups sugar
1-2 tsp cinnamon
1 tsp nutmeg
1/2 tsp salt
Heat oven to 350. Spray no stick cooking spray in 9x13 cake pan.
Mix pumpkin, milk, eggs, sugar, cinnamon, nutmeg and salt in a bowl.
Stir until smooth. Pour into cake pan. Sprinkle yellow cake mix on
top. Bake 50-55 minutes.
NOTES: You can substitute pumpkin pie spice for the nutmeg and
cinnamon but I was out of it. I also realized that you could leave
the cake mix out and it would be a pumpkin custard. If you do this,
watch and make sure the top of the pumpkin doesn't burn or if it
starts to brown too much, cover with some foil.
