There are several versions of pickled eggs, Here is one.
1 small can of beets
1 onion cut into rings (sliced thin)
6 eggs Hard boiled and peeled.
Place in jar that has a lid.
Drain juice of beets in a pan. add 3/4 cup of cider vinegar, couple cloves of garlic, roughly chopped salt and pepper to taste. I also add a teaspoon of hot crushed pepper. This is optional or to taste.
one bay leave
3 to 6 whole cloves
1/3 cup of sugar.
