I'm not too sure about sauces, but you can throw in some guacamole and mix it with things like pickle relish or other assorted things. You can try using grape jelly and cheese with a ham. It sounds strange but it can be really good. You can also throw the sandwich in the microwave for a few seconds after adding ingredients to warm them and that makes them distinct as well.
