Hi Bill, It's sugar that comes as bigger grains. You can often find it labeled as "Demerara" sugar (I may have spelled that wrong). I know that Whole Foods and Trader Joe's both carry it. If you don't have it, you dan just sprinkle the cookies with regular granulated sugar. HTH, Penny
