Oh, roast them, they're delicious. Combine -- unpeeled -- with salt and pepper to taste, maybe some fresh rosemary as well, and a couple Tablespoons of olive oil. Place on a sheet pan or baking tray. Preheat oven to 425-450, roast for 15 minutes, test for doneness with a fork, stir and roast for 5-10 minutes longer. Enjoy! Penny
