My Potato Salad

6 large potatoes, peeled and diced

1 large onion, peeled and chopped

Boil potatoes until done.  Drain and put potatoes and onion in large bowl.  
Cover and let stand 10 minutes.

To the potatoes and onion, add:

3 tablespoons mayonnaise

2 teaspoons mustard

1 or 2 teaspoons pickle relish

1 egg, boiled, peeled and chopped

        Mix all ingredients well.

Once the salad has chilled, can sprinkle some garlic and pepper over top.

All measurements can be adjusted to taste--more egg, less mustard, etc.

Somebody may ask why we marinate the potatoes and onion.  All I know is that 
when I was 18, that is what I was told to do, and everybody loves my potato 
salad.  I was also told to add salt if I want it before I add the water to boil 
the potatoes.  I usually don't do that, but I used to.

We also like baked beans with the pork but my baked bean recipe isn't anywhere 
near me right now.
