Honey Roasted Ginger Pecans 1 cup honey 1 tablespoon corn syrup 5 cups pecan halves 2 teaspoons ground ginger, or more to taste (up to 1 teaspoon more) 1/2 teaspoon white pepper 1 teaspoon salt
Heat oven to 300 degrees. Line baking sheet with parchment paper and set aside. Combine honey and corn syrup in small metal bowl. Set bowl over small saucepan boiling water to warm slightly, making honey easier to work with. Combine pecans and honey mixture in large bowl and toss well to coat. Combine ginger, white pepper and salt in bowl; sprinkle over pecans, tossing well to coat. Spread pecans in single layer on prepared baking sheet. Bake, stirring often with wooden spoon, until honey starts to form hard shell around nuts, about 45 minutes. Honey will bubble up as it cooks. Let cool before serving. Separate nuts that have clumped together. Can be stored in airtight container for several weeks. Makes 5 cups. Source unknown My note: I have not tried these, but they look like the recipe would work. If you don't want the spices leave out whatever you don't want. Folks: Over the holidays we got a plastic tin of what was called "Honey Pecans." They tasted like honey and were really yummy. Does anyone have a recipe of how to do this at home? Thanx!
