Ingredients 12 oz. vegan 70% cacao dark chocolate, grated 2 ripe Dole bananas, mashed 1/3 cup lite coconut cream 3 tablespoons peanut butter 1/4 cup sifted unsweetened cocoa Directions: 1. Mix together chocolate, bananas, cream, and peanut butter in saucepan over low heat; stirring 5 minutes or until chocolate has melted. 2. Cover; refrigerate 2 to 3 hours or until almost solid. 3. Scoop one tablespoon size chocolate and form into balls. 4. Place cocoa powder in shallow bowl; roll truffles in powder to lightly coat. Refrigerate at least one hour before serving.
