Welcome to Ercoupe list.... WOW - an 0-235 ! You are correct in that the flow to the carburetter is gravity flow from the header tank ( unless it has been modified, by header tank removal), with excess fuel overflowing back into the inter-connected wing tanks. This keeps the coupe balanced as to fuel flow.....no heavy wing.
The original engines used an engine driven mechanical fuel pump to circulate the fuel....with a restrictor in the outlet of the pump; so that it supplied a slight excess of fuel (over the required rate of fuel at full throttle)... with the excess flowing back to the wing tanks. With the 235, and higher fuel consumption possibility, you may have to increase the diameter of this restrictor to obtain sufficient fuel flow. (The STC owner, should be able to supply you with the needed changes to the fuel system to comply with the STC). Perhaps, the STC requires an electric fuel pump????? In either case, if the flow is excessive, the excess will overcome the capacity of the return limes. and cause fuel to bubble out the top of the fuselage tank....NOT GOOD TO HAVE RAW FUEL WASHING INTO THE COCKPIT ! Enjoy the coupe, and let us know about climb performance, and fuel use. I would expect similar fuel use at cruise, but potentially more on climb......
