Hi,

is there a way, through courier-imap or an add-on, to not save
certain attachements in .Sent mail folders?

That's the mail client's job, not the server's job.

Well in our case we are seriously thinking about restraining users'
right to save attachements in their ".Sent" folders, lest mailboxes
become a storage or versioning system. Our quotas are tight at 2G and we
could do without users always complaining about 'mailbox full' errors

Users will always find reasons to complain. If they don't like that their mailbox is full, they'll just have to clean it up.
