I'm trying to setup a shared maildir which postfix can deliver messages
to. This shared maildir can then be accessed to whomever I give
permission by logging in to courier-imap with their own login/pw. Is this
possible?

So far I've got postfix to deliver to a shared maildir, but it puts
messages in the new subdir (as expected). Apparently courier-imap doesn't
look in the new subdir for shared folders, why is this?
Because read-only uids would not usually have write permissions necessary to
move the file.
Shared folders are supposed to have the sticky bit set; only the folder's
owner, and the message owner is supposed to be able to touch the files.
Generally you can't deliver mail to shared folders. A client with write
access can move mail into a shared folder, to be read by someone else.
