If you're using RedHat you should really be building the RPMS, it's alot easier! Check out the docs here:
and here: http://www.courier-mta.org/install.html#install under "Building the RPM packages" and here: http://www.courier-mta.org/FAQ.html#rpm for more info on building RPM packages if you're getting compile failures your not likely to succede while ignoring them.
