Not as easy as it sounds, but easier than you'd think. Your best bets are to post your interest in particular titles possibly here, on boardgamegeek or consimworld. Other possibilities might be to check the "opponents wanted" on ACTS or Vassal, though admittedly those lists aren't actively maintained, so you may need to ping several people before getting lucky.
