The real answer is that the modules to use are the ones that do what you want to do on the image and we can't answer that for you.
But in an attempt to be a bit more helpful, for ones that are easy to use and often helpful I would recommend the 'Shadows and highlights' and 'Vibrance' tools. Not to apply to every image of course but where they help they really help. I would have added the de-noising tools as well for when you shoot high ISO images, but this is becoming an automatic function with new darktable versions so less applicable now.
