F600EXR and HS30EXR don't use Fuji X-Trans CMOS sensor. Camera using it are X-Pro1, X-E1, X-M1 and X100s.
Darktable relies mostly on it's own algorithms to process RAW files and a bit from extra libraries. For processing RAW from X-Trans with open source or free software you can use: - dcraw, command line only. I never had very nice results with it but it's tricky to use I may have miss something. - digikam at least v3, painfull to install on Linux if not in your disto. Functionalities are limited. Processing is better than with dcraw but not so good as with a commercial software. Amazing tool to manage collections of photos. - the software provided with the camera, not user friendly. Good results. - a free software (I forget the name) available on Mac OS only. Didn' test it. After numerous tests on Linux I came to the conclusion that the best solution is to use LR running on Windows inside a VirtualBox :( Nice GUI, very good results but not so cool as DT.
