Normally if you have put the profile in the ~/.config/darktable/color/out
before you start the darktable, they should be available in the output color
profile under soft proof.
As far as I understand the output colorprofile should reflect either sRGB or
AdobeRGB ( I might be wrong on this but as far I know CMYK is not supported by
darktable), and you set the softproof profile to your desired icc.
Then when you press "s" when the output colorprofile module is active you
should see "soft proof" at the left corner of the image.
The same logic applies to the export, meaning you export either sRGB or
AdobeRGB but not the printer profile. The idea is if you have corrected,
developed your image to your liking and soft proofed your likings, the print
output should/would match it.
