I don't know postfix, but I'd recommend you implement greylisting. Spamassassin can come after, and won't have to work nearly as hard. Sendmail has a greet pause feature that might have a postfix equivalent. It is quite useful and very easy to set up. It has a similar affect as greylisting. Basically, these features drop a *ton* of crap that comes in from non-smtp complient mailers - i.e. viruses, spam-bots, and their ilk. And it drops all that crap before any data is sent.
