Manual says: Choose the line terminator to use. You should select it
based on the platform you want the created file to be used on. Choose
one of several field separators and whether to quote all fields or
only as needed. The defaults create the standard Unix csv format.

OK, but if it could be seen while selecting that csv is default, then
we wouldn't think we have to select 'comma'.

This text is no longer present in the current version of the Gnumeric
manual.

With current gnumeric, use "Comma Separated Values (CSV)" to save CSV files;
"Text (configurable)" is a separate file types available when exporting
spreadsheets, for which the documentation doesn't claim to default to comma
being the separator character. 

As this report is no longer applicable to the current Gnumeric packages, I'm
now closing it.
