1. unable to use it with nginx-unit, that replaces php-fpm and httpd.
   Yes, unit is not in official debian repo, but when it will be in, it
   will not provide httpd, as it's application server and can be used
   together with nginx.

2. It works fine without php-json, php-nrk-predis, php-pclzip,
   php-seclib, and depends only on php-curl and php-xml

As for the other dependencies, those are set by the upstream developer; you'd need to contact them to reduce the footprint of the application. They've ignored my pull requests for unbundling packages for over a year though so I wouldn't be too optimistic.
