In Debian Bookworm since an update on 2023-02-24 of pipewire-audio and its 
dependencies
In the gnome interface, quick settings no longer show different audio outputs 
if another is selected
The problem occurs if an s/pdif output is selected
In gnome settings, all audio outputs are always available at all times.
A simple logout and login will allow you to recover the audio selections in the 
quick settings.
