What I *believe* happened is that you installed libreoffice-l10n-it. That one (as it's for 5.3.4) removed your LO 5.2.7 (which is still there because i386 fails to build - well, failing its testsuite - because of the Java clash clash regression). Plase post a dpkg -l | grep libreoffice Which doesn't make it a separate bug per se; this is expected in unstable. If you don't want to have stuff like this happening, don't use unstable.
