Sure, don't run the daemon at all. When you install exim, "rm /etc/init.d/rc?.d/S*exim" and it won't start. Local processes will be able to send mail via the /usr/sbin/sendmail link, and there's a cronjob in /etc/cron.d/exim that'll try to clear the queue twice an hour. > and perhaps this should be the default (correct me if this is already > the case, but I don't recall it being so).
