The option INITRAMFS_LOOPAES for mkinitramfs is explained in the file
/usr/share/doc/loop-aes-utils/README. I think it would be more appropriate to 
include a short explanation in the initram-tools config files. So that one 
can spot the information more easily.

A starting point could be a file
/etc/initramfs-tools/conf.d/loopaes with the following content:
