I think you would have to set debconf frontend somewhere to dialog. Install dialog and also change option in lb config from interactive "no" to "yes" or "shell". I dont remember well please check with live-manual and your search engine.
Check it out! Also live build is intended to be non-interactive by design so like that you dont have to exit shell and/or type stuff/configure things for it to auto build. But your use case could be different. Progressbar for me is not that important as if it accually builds and boots;/ Thats lot harder at least for me^^ But it was also long time I didnt try.
