Hi,
I am joining a bit late but thought I would chip in anyway...

I really like Sound Juicer for my Music ripping. I like the fact it
supports all kinds of formats, is easy to use, and has a simple layout.

For burning CD and DVD's, I use k3b.

For ripping DVD's I use K9Copy which is in the debian-multimedia repo's.
