Alacarte was the usual application to deal with GNOME menu items but I think is broken somehow. Anyway, menu items (and their inners) are usually placed under: ~/.local/chare/applications/*.desktop /usr/local/share/applications/*.desktop You can open the ".desktop" files with a text editor to find out what binary/arguments is calling/using (the "Exec=" line) as well as seeing additional options set for the launcher.
