In the case of Icedove/Thunderbird, you don't even need to set anything[0]. By default it does correct quoting, you just have to press "Reply to list" (which is the default in the case of mailing lists), trim and add your comments. To get the weird emails Ethan sends, he must have (mis)configured something to different values than the default.

[0] Well, perhaps one needs to configure it to not send HTML, as it's somewhat too eager to use HTML. But this is not a problem with Ethan's mails.
