That's the thing -- I'm on stable-bpo, which has linux 7.0, and the
module did not compile out of the gate for me when I tried the update.
Either way, I'd rather anticipate the problem of getting off
nvidia-driver now on this machine.

I would suggest to investigate your apt sources because
libgallium-26.1.2-1.so on your system does not seem to be present in
trixie+backports repos...
apt-policy mesa-libgallium should indicate where this package come from:
