gnome-terminal has its under edit -> keyboard shortcuts

FireFox nor Thunderbird have a built in mechanism for customising all 
available keyboard shortcuts.  However, there is an extension available 
that lets you customise almost all of them called keyconfig:

The bad news is that (last I checked) it wouldn't let me customise copy 
and paste.
