Just a short answer... i don't think we're encouraging people to use Gaia's look and feel, just providing a way to use components we've tested and which have proven to work well from a visual and interaction point of view. You can build whatever tou want on top of it. Tou can change the visuals, interaction models or start from scratch and create your own Firefox OS app... if you have the skills to do so.
Anyway, if someone wants to start from scratch every time they want to build a web page, they're free to do so.
