Update `IcebergDataset` to incorporate all snapshots, not only the current
one
* Update `IcebergDataset` to use
`IcebergTable.getIncrementalSnapshotInfosIterator` rather than
`.getCurrentSnapshotInfo`

* Augment `IcebergDatasetTest` unit test to exercise mult-snapshot icebergs
