grep ENABLE_GTK config.log if this is not 'TRUE' then your OOo is not building any gtk connected parts. Seeing as this is the default its odd you don't seem to have it. Are you sure you haven't passed --disable-gtk as a configure option or something ? You need the gtk development packages of your system installed of course, but that's an obvious requirement.
