Robert,

I am deeply involved in OOo Accessibility, so of course I like to see
people working in this area :)

I am not so sure about what kind of dyslexia specific things can be done.
Having a grammar checker would be cool for all, but I think that's hard
to archive, especially for non English languages.

What about the color thing - I can imagine an OOo component, which on
demand checks for certain things which should be changed.
This component could also be extended to check for screen reader
specific things like "images/hyper links not labeled", and much more...

Based on our Accessibility API you might also want to connect OOo with
some speech recognition software.
I am not sure it this is what you meant with "speech option for further
assistance"? Or did you mean reading parts of the document, without the
need of a screen reader software?

Does it have to be a 'customized' version of OOo word processor for some
reason, or can it be a (collection of) add-on(s) (components) for a
standard OOo installation?

Best regards,
Malte.

PS: Did you already see http://ui.openoffice.org/accessibility/ ?
