At the end there's no big difference I think. If the hardware is the same which is supported, will be easy to use for the platform, independent if there is already Android running on this device or not.

Isn't that only if you want to install Sailfish on an existing device that already has Android on it? I assumed the OP wanted to build a new device from scratch (though I suppose I could be wrong about that).
