Hmmm - depends if you're trying to count the overall number of tracking-cookie / like-button type hits happening across a large number of users (hard!) or just attempting to show people how much they're being tracked on average.
For the latter how about basically writing a simple proxy sever with URL re-writing that pops up a dialogue box every time the user is tracked. The user starts off at the Show-Tracking site (showing google's homepage) and then navigates around from there as normal (via URL-re-writing) but the proxy site adds some javascript that shows a pop-up every time a tracking cookie is read or like-button notification is sent. Less effort than writing a plugin and better cross-browser support. Not something people would use on a day-to-day basis but certainly could be used to create some nice videos showing that just normal usage of the 'net records a heck of a lot of what you're doing.
