There is an open issue for proper multi instance support - 
https://github.com/minishift/minishift/issues/126
We are working with the Minikube side to make sure we align our approaches on 
this.

For now you can work with MINISHIFT_HOME. By setting this env variable you can 
point the Minishift
home directory to another directory which gives your two instances as well. 
There is still a little 
gotcha with that, since the hypervisor does not allow you to create two 
instances with the same name.
You can work around this, but using once xhyve and once VirutalBox. This is an 
issue we can easily 
address though.
