Right on the mark Bill..thanks! :) All auth_codes are indeed there, as Bill pointed out a change in state (ie. Locking then unlocking or auto renew, let expire etc.) will then show the auth_code within the domain extra section after this change has been made.
Of course we are working on a way so that resellers or registrants dont need to do this, so hang in there and we'll announce it once we've bubbled up those auth_codes ;)

I've only looked at one of ours, and saw the same thing. The domain was
locked, so I unlocked the domain and went back to set an auth code, and it
was no longer blank. Since I was looking at it right after the migration
had completed I just figured I had looked at it right before and after the
auth code was loaded.
I just looked at two more .org domains and experienced the same thing.
Unlocking and locking the domain made the auth code load in. So there
is a work around to get the auth code to show up, however this is
definitely an issue that OpenSRS needs to look at.
I suspect the auth codes are set for all .org, they just aren't being
loaded in due to the lock status.
