Have you looked at these? POE and small.
I haven't tried them myself, but they look interesting and versatile (SNMP and HTTP).

Not bad in comparison to a lot of other choices. Base unit is $210 and probes are $54, but the base unit is small enough that you could deploy it almost anywhere.

Poseiden 3265 is also promising, but I wasn't able to find direct pricing after some quick searching around.

There's probably a hack you could do with Rasberry Pi for < $100 too.

also, sensaphone is not cheap, but you can run the sensors over any cat-5 house wiring that you have hundreds of feet away. 8 built-in ports and remote units available. IMS-4000 1RU base server is ~$2k. temperature/humidity probes extra. These are more for alarming as the sensaphone has all kinds of triggers, alerts, etc.
