Just as an ad-hoc idea, although it does not really answer the
interesting questions posed by your situation: would it be feasible to
use new/replacement drives that are different in some aspect from the
other (data) drives?  Then you might be able to tell kickstart "only do
the install if it's a Hitachi drive" and/or "only do it if the drive has
320GBytes or less" and thus avoid the undesired result of wiping a data
drive.
