Heya!

Really I think what makes any OS a "Unix" these days isn't the initial
brand you're seeing, but whether or not it's fully POSIX compliant, and
does so without being confusing about it (OSX).

I think Ubuntu is head and shoulders above the rest right now in terms of
"Good Unixes".  Not to say that I have any disliking of BSD for any reason,
except that it's just not as easy to use, especially for newcomers.

Whatever you might hear about Ubuntu being too simplified is probably just
a reaction to the GUI it ships with.  Underneath it all is just the same
Linux with great standards and conventions in place to make finding
everything and accomplishing tasks simple.  There is something to be said
about the software repositories both first and third party.  Countless
tools are being made available as .debs for Ubuntu now as well, which I
think is huge.

In terms of books and documentation, Ubuntu has http://www.askubuntu.com as
well as their forums as well as a massive base of anecdotal knowledge
available via a google search.
