Here's what I use and why: OpenBSD: Networking and low system requirements. Runs on a 486. Ships with all the tools I need for DNS/Static Web/Firewall/DHCP.
Solaris/OmniOS: Fantastic file system and great pedigree. It's shit to build/install *anything* on it. CIFS with ACLs in the kernel. FreeBSD: used to be for jails, but Linux containers do a great job. ZFS runs native here too, but I was burned way too many times to trust it. In about five years it should replace Linux/Illumos for me for my own production environments. Ubuntu Linux: Software and hardware support for new stuff. If I want to deploy something, it's stupid easy here. I like that they're pushing the envelope, but find it funny that they're trying to clone OS X. I use it as a desktop if I'm feeling too cheap for Windows.
