A couple of comments: 1. a low-power, streamlined server dedicated to running SlimServer is a great idea but quite a niche market
2. If you assume that the target market would be technically-competent people (like many of us on here) then I would say that the prices you are quoting would mean that many people would just build their own server 3. If I were you I would consider offering no more than 3 sizes of drive i.e. 200GB, 300GB 400GB.
