Yes each player, be default, is indepentant and will play seperate
streams/playlists.

You can also syncronise multiple players together, so you can have the
same music in the kitchen as the living room if you want. This
partnership can be formed or broken at any time through either the web
interface, the remote (in the case of the SB3, Boom and Transporter) or
the wireless Controller.

There isn't a hard and fast limit to the number of players, it's all
down to how powerful the PC running SqueezeCenter is. Although even a
basic PC from the past couple of years should be able to handle more
players than you are likely to have rooms. What is more of a concern is
having multiple players on the same wireless network. Because of many
factors, wirless can quickly get saturated and cause audio drop outs
and connection problems. This obviously isn't a problem if you are hard
wiring them with ethernet.

Something else to consider is the format your music has been ripped in.
If it is in a format the players can natively play back (Flac, MP3, Ogg,
Wav, or lossy MWA), then all the server is doing is sending the data to
the player and handling control etc. However if it is in a non-native
format (AAC/ALAC/iTunes, WMA Lossless, etc) then the server will have
to do a lot of work transcoding these as they are played.
