I use the Web interface for this. Just click the shuffle button (rightmost button above the cover image in the default web ui). There's also shuffle button on the remote, which AFAIK toggles through the different shuffle modes (no shuffle, shuffle by album, shuffle by track, maybe some others). I'm pretty sure the other various remote control solutions (the controller, iPeng, Moose, etc.) can also do thios.
